The lions just kept coughing up these giant hair-balls of early Christian doctrine . . . even they couldn't swallow that !
Absolutley ruined the dramatic effect of the scenes . . . :-)

Ridley Scott said on the dvd commentary, that it didn't look realistic enough; the lion was very friendly, and didn't appear fierce enough to make the scene believable. You can watch the scene on the dvd extras; I think he was right.
The script, which I've read, didn't even call for the scene. The camera was supposed to close on Maximus' face while we hear the screams and growls.

because it was grossly historically inaccurate- oh wait, so was the whole movie.
In reality it was extremely difficult to get lions to attack people, they had to be starved, beaten and even then they had to tie meat and offal on the christians so the lions would eat them. and even then it hardly worked.
I don't know the statistic (if there is one) but I wouldn't be surprised to find that there were more lion trainers executed because the christians get eaten, than actual christians eaten by lions.
