For most of us, the ability to actually enjoy hot peppers is a taste that's acquired slowly. As you climb the chili heat scale, you develop a tolerance that allows you to try the next hottest variety. If you find that you've eaten a pepper that's too hot for your taste (if your tongue is hanging out, your hands are fanning your face, and you're inclined to pick up your napkin and lick it, you've definitely crossed the line), there are remedies available. First of all, DON'T run for the water. Capsaicin is an oil, and because oil and water don't mix, drinking water will generally just spread the oil to other parts of your mouth. Milk, on the other hand, will help cut the heat, as will rice or bread, which absorb the oil. Others recommend acidic foods, such as tomato juice, fresh lemon or lime to counteract the heat.

Milk or bread and make sure you don't touch your eyes or face - the capsaicin in the pepper will make your eyes feel like they have burned out of their sockets. Next time wear rubber gloves and let your nose do the tasting first! Don't eat the seeds - that's the killer part and make sure your are slowly exhaling through your nose the whole time you have the bite of pepper in your mouth, the fumes/vapors will carry into your sinus cavities and get you that way too.

milk, quickly. keep it in your mouth too. Milk and bread. I love chilli's but sometimes it just takes you by surprise. What ever you do though hun, DON'T HAVE WATER. It just heats it up more when you swallow. Hope this helps. xx

Eat some milk chocolate, your mouths hurting coz of capsicum the hot chemical in the chilli. You need and emulsion, a fat suspended in water to neutralize it, by attaching itself to it and washing it away. oh and wash your hands before to next go to toilet or ull really know pain. ha ha

drink milk as it helps neutralise the heat in the chilli or eat yogurt. water won't do any good.
