If Jesus and the bible could be proved wouldn't that mean our christianity wouldn't be based on faith? Which if it could be proven that means the Bible is lying to us? Science will never be able to prove or disprove God so whats all the problems for. Does it really matter to you what I believe?

Right on the money. The term "proof" implies certainty and with certainty, "believing" becomes "knowing". If I jump off my roof, I don't have faith that I'll fall, I know it.

...and perhaps that's why faith (trust in God) is one of the most central themes in the bible. Don't people do all sorts of things to "defy gravity"...to pit their own abilities (strength, knowledge, etc...) against something they know exists? If people knew that God was, wouldn't they also be compelled to find ways to resist him?

The way I see it, faith is a central theme because faith has a value we can't fully comprehend. If some part of us continues to exist after our physical body dies, then that part needs to have at least one "sense" beyond the body that allows it to perceive the next life. A person that can't perceive anything beyond the resources of the body (intellect, reason, the five physical senses) would be unable to function if those resources were removed. For those that don't learn how to use their faith to perceive their environment, the afterlife could be just a dark, endless void...how scary would that be?

We are told that the Bible has no scientific errors and is utterly perfect/protected, yet it says the bat is a bird (Leviticus 11:13 & 19), hares chew the cud (Leviticus 11:5-6), and some fowl (Leviticus 11:20-21) and insects (Leviticus 11:22-23) have four legs.

you can start with these and then try to explain why people actually think that a fish could swallow a man and that that man could live for three days and three nights inside it...

It really does not matter. Organized religions a simply a tax free corporation like any other business., that should never be used to pass judgment on others. Just use it a a guide, and live your life as best you can. Everything will work out fine.

No, it would probably just require less faith. It would remove a lot of the obstacles to belief.
