Most of the tours I've seen are from Alice Springs but I've already got my flights and they are from Friday - Monday. I'm travelling alone so would prefer to tour with a group rather than lots of individual trips- each time with different people...

Are you already booked on a hotel at the Yulara resort? At any of these you can make day trips. You'll find brochures at the receptions.
If you don't have a hotel then go to your travel agent and ask for a tour of 3 days and nights. There are tours of this length departing each day of the year (except Xmas day I think). Then you don't need a hotel because you sleep in camps or similar on your way.

I know that most tours going from Alice to Alice you can join up at Yulara on the first day but then the problem is that they will finish up at Alice Springs on the last day, because usually after seeing Uluru & Kata Tjuta on the first few days they then travel onwards to Kings Canyon then back to Alice Springs. So you would have to do Ayers Rock - Alice Springs then get a bus back down to Ayers Rock. A bit of a pain but on the plus side you would also get to see Kings Canyon. See some of the links below. Note that a lot of companies won't advertise the trips as starting in Ayers Rock but they mostly will allow you to join there on the first day around lunch time, just ask. These are mostly camping style trips.

Otherwise I know that APT & AAT Kings will do "tours" Ayers Rock - Ayers Rock but as you say, they are just a package with accommodation & day trips where you will be with different people all the time.

Uluru is a place people go on tours to not on tours from which is why tours start at Alice Springs. That being said, you might find a Gunbarrel Highway/Giles weather station tour you could join at Uluru. Otherwise you would need to go back to Alice Springs and join a tour from there.
