With the leftover apples, you can use it to sweeten breads, muffins, cookies, etc. You can add that instead of sugar. I've heard that some people actually use it as a base when they make homemade apple sauce too. With any leftover fruit pulp, you can add a bit of the juice to it and stick it in the freezer for a while and have a nice sorbet. You can also put it on top of your (cold or hot) cereal.
With the carrots (or any veggies, for that matter!) you can use it as a broth for soup, "extras" for stuffed peppers, add it to your meatloaf for extra fibre, add it to casseroles, etc.
There are tons of things you can do w/ the leftovers. Jack LaLane has a whole cookbook devoted to using the leftovers. I hope that gave you a start.

This doesn't have to do with carrots or apples, but if you ever make homeade lemonade and your freezer, refrigerator, bathroom, house anything smells just put it there. It will eliminate the odors and leave a nice and fresh lemony smell. MMMMMM

Any recepies you use it for would require adding water. Besides, you have already extracted most of the vitamins. Compost it. Your garden will love it.
