Fast and Easy Fresh Garlic Mashed Potatoes Recipe
These delicious garlic mashed potatoes have a light garlic flavoring that even the youngest family members will appreciate. Of course if you are a hardcore garlic fanatic you can easily make them spicier by simply adding a bit more fresh garlic to the pot while cooking.
6 large Idaho or Russet potatoes
6 Cloves Fresh Garlic
1/4 cup milk
3 Tablespoons Butter or Margarine
Salt and Pepper, to taste
Peel and cut potatoes into sections approximately 1 inch thick.
Peel garlic cloves and cut in half.
Boil potatoes and garlic together in a large pot, making sure that the water covers the top of the ingredients and the pot is large enough to allow for boiling, for about 20 minutes until potatoes are tender all the way through.
Drain off the water.
Add butter, salt and pepper.
Mash the potatoes and garlic together either by hand, (using a masher) or with an electric mixer.
When almost completely mashed, add milk..
Serve immediately while still hot.
Makes 4 to 6 servings.
If you enjoy a heavier garlic taste, add 2 cloves of garlic per potato.

This is the way I do it, and they're good. While boiling the potato chunks, melt about 6 Tbsp. of butter with a couple heaping spoonfuls of minced jarred garlic. When the taters are done and drained, I toss in a room temperature pkg of cream cheese (not light or fat-free) and mash a bit, then turn on the hand mixer. When they're almost done I add the garlic butter and finish mixing.
They're so good. And for the record, I leave the skins on the taters. I like the texture.

All of the above methods work well. One trick I've used for years is to add a package of cream cheese to the mash. I use a KitchenAid Stand Mixer (which makes light work of this). I've also added a package of sour cream at times. I like the flavor and texture of adding both with the garlic.
Pre-roasting the garlic will make the flavor sweet (not so pungent). If you prefer garlic's pungency, just throw in some crushed garlic.

Make the potatoes like normal mash potato but i fry garlic in a little olive oil before adding to the mash, I think it becomes sweeter and tastes better.

You boil the garlic in when you boil the potato's and then when there cooked just mash it all up you can use as much or little garlic as you like for you taste.

Roast a couple of cloves of garlic wrapped in foil in the oven. Mash them and add them to the mashed potatoes. Mix well.

I love these.
GARLIC MASHED POTATOES
2 lb. peeled and diced potatoes
1/2 to 1 head garlic cloves, peeled and mashed
6 tbsp. butter
1/2 to 3/4 cup heavy cream, half&half or milk
Cover potatoes with water sufficient to cover in a heavy-bottomed pan. Cover and bring to a boil. Reduce heat slightly and simmer until potatoes are fork-tender.
Drain potatoes and set aside. Return empty pan to heat and add butter, leaving until butter melts. In a separate pan, bring cream or milk to boil (do not allow to curdle; remove from heat immediately when it starts to boil).
Mash the potatoes, beating in the butter and half&half, cream or milk, mashed garlic, and salt and pepper, until potatoes are smooth and fluffy.
NOTE: For milder garlic flavor, parboil garlic along with potatoes, then mash with potatoes.

Here's Good Housekeeping's foolproof recipe for fluffy mashed potatoes, with garlic:

Ingredients
3 pounds all-purpose potatoes, peeled and cut into 1-inch chunks
4 tablespoons margarine or butter (1/2 stick)
1 1/2 teaspoons salt
1 cup hot milk
Directions
1. In 3-quart saucepan over high heat, heat potatoes and enough water to cover to boiling. Reduce heat to low; cover and simmer 15 minutes or until potatoes are fork-tender; drain.
2. Return potatoes to pan. With potato masher, mash potatoes with margarine or butter and salt. Gradually add milk; mash until mixture is smooth and well blended. Keep warm. Makes about 8 servings.
WITH GARLIC AND LEMON
Prepare Basic Mashed Potatoes as above in step 1. Meanwhile, with garlic press, press 2 cloves garlic into 1-quart saucepan with the margarine or butter and salt called for in step 2; heat over low heat 2 to 3 minutes until margarine melts. Add garlic mixture to potatoes with the milk; mash. Stir in 2 tablespoons finely chopped parsley and 1 teaspoon grated lemon peel.
