What's the biochemical reason why people experience headache after intake of Monosodium Glutamate?

Its basically a form of allergic reaction. The MSG chemical compound sets off a non-friendly chemical reaction in the brain chemistry that causes shorts in its electrical (for want of a better term) functions--resulting in migraine pain. Hope this helps.

it is not the glumate alone, it is also the sodium....causes water retention and increased blood pressure, increased blood pressure causes the headaches.
