that's me= ese soy yo ( if you are a man)
that's me= esa soy yo ( if you are a woman)

I think "Asi soy yo" is a better translation. "Esa (or ese) soy yo" is more literal but sounds odd. Some expressions just don't translate well.

You can say "Soy yo" or "Así soy yo".
