These are not tomato sauce based like most recipes, but
this recipe is very tasty (I have made it a few times) and you can substitute chicken,turkey or fake-meat for the beef.
Beef-Stuffed Peppers
4 large green bell peppers
1/2 pound lean ground beef, ground round
1/4 cup finely chopped onion
1 cup cooked rice
1/2 teaspoon salt
1/8 teaspoon paprika
1/4 teaspoon celery seeds
1/4 teaspoon curry powder
dash Worcestershire sauce
1/4 cup soft bread crumbs
Black pepper to taste
PREPARATION:
Wash peppers; remove stem ends, seeds, and white membranes. Cook bell peppers in 1 cup of boiling lightly salted water for 4 to 5 minutes. Drain. Brown ground beef with chopped onion, stirring to break up beef
Add rice, salt, paprika, celery seeds, curry powder and Worcestershire sauce; mix well. Fill peppers with meat mixture and top each with crumbs. Bake stuffed peppers at 350° for 30 minutes.
Recipe for stuffed peppers serves 4.
Some nice crusty bread and a tossed salad and you have a meal =)

Since the peppers will be a cooked vegetable, try making a salad. Especially if you are making the peppers spicy, a salad would be a nice way to cool down your mouth. Something simple with a dressing that is on the sweeter side, like tomato bacon or french =)

My dad loves the TV dinners that are stuffed pepper casserole, so I have found a version that is similar to those, without all the preservatives and junk they put in them things.
Ingredients:
1 bell pepper, chopped (I used 1 bag frozen bell peppers)
1 lb. ground beef
1/3 c. chopped onion
1/2 tsp. salt
dash pepper
1 lb. can tomatoes
1/2 c. water
1/2 c. uncooked rice
Directions:
Brown ground beef and onion. Drain off fat. Add salt, pepper, tomatoes, water and rice. Cover and simmer until rice is tender, about 15 minutes. Add bell pepper. Bake in microwave, uncovered for 5 to 6 minutes or in conventional oven 20-25 mins.
I cover it in cheese that he likes and freeze all of it in single serve dishes.
To leave the peppers whole, just boil the peppers in salted water to soften, instead of chopping them up.
As far as another veggie, I would give them a salad....I never do another veggie as this has the veggie, meat and starch in it.

Stuffed Bell Peppers
6 servings 50 min 15 min prep
6 medium green bell peppers
1 1/2 lbs ground beef
1/2 medium onion, chopped
1 cup instant rice
1 (14 1/2 ounce) can diced tomatoes, with juice
2 (8 ounce) cans tomato sauce
1 (8 ounce) can tomato sauce (optional)
1 cup shredded colby cheese, if desired
1-2 tablespoon Worcestershire sauce
salt, to taste
pepper, to taste
Preheat oven to 400°F.
Cut tops off the peppers and scrape out the insides; making sure to get all of the seeds.
Once cleaned out, place peppers in a casserole dish.
If need be, cut a little off the bottoms to even out the peppers so they stand straight up.
Brown beef with chopped onions.
Drain off excess fat.
Add tomatoes, 2 cans of the tomato sauce and Worcestershire sauce; salt and pepper to taste.
Bring to a boil and stir in uncooked instant rice; cover, remove from heat and allow to stand 3-5 minutes.
Stir meat mixture and spoon it into the peppers.
*Optional-Pour remaining can of tomato sauce around the bottom of the baking dish.
You can add a little bit of water to thin it out, if you desire.
If not using remaining can of sauce, be sure to add 3-4 tbsp.
of hot water to bottom of baking dish.
Cover baking dish and bake in the preheated oven for approximately 30 minutes or until peppers are tender.
Remove cover, sprinkle with cheese and bake for a few more minutes to allow the cheese to melt.
I think you could make a salad on the side and that would be plenty, they are sort of a meal in themselves.

in the pepper with rice I always put onion, garlic, and very small diced and soft zucchini and yellow squash.
side veggies could be grilled asparagus, or grilled eggplant. you may also want to try cut up fruit as dessert(watermelon goes great with stuffed peppers.
one big accent to stuffed peppers is sausage meat broken up in the stuffing ...if you like sausage!!!

Bread crumbs (plain or seasoned)
butter (sm. amount)
Cut peppers in halves; clean and remove seeds, then place in boiling water for about 5 minutes or softened. Place in baking pans and put aside. Brown ground meat. Remove excess fat if necessary.
Prepare Stove Top dressing and mix with brown meat. Beat egg and fold into mixture. Fill pepper halves, top with bread crumbs and a dab of butter on top. Fill bottom of baking pan or pans with a small amount of water. Bake in 350 degree oven for approximately 30 minutes (or until brown).
Peppers can be frozen and cooked later. Yield: Will fill 10 or 12 halves according to size of peppers. Leftovers can be placed in a casserole for another meal.
******VEGETABLE CASSEROLE
1 Can Veg-all (drained & rinsed)
1 Can Artichoke hearts in water (drained and rinsed)
1 Can Cream of Mushroom Soup
1 Small Onion Chopped (Sautéed in butter till tender)
1 Cup Sharp Cheddar Cheese Grated
1 Can Water Chestnuts, chopped
1 Pkg. Ritz Crackers (Crushed and mashed with melted butter to combine)
Salt & Pepper to taste
Combine all ingredients (except Ritz crackers). Cook in pre-heated 375 degree oven for 30 minutes. Top with butter Ritz cracker crumbs and bake an additional 10.

You could use a low carb Bread, then dehydrate that bread and turn it into bread crumbs. Also try using a reduced fat mozzarella. Again uses Light Extra Virgin Olive Oil. and Go reduced fat for the Parmesan cheese. Otherwise you are goo to go with your recipe. P.S. the best way to dehydrate bread is 10 sec in the microwave.
