Maybe they aren't rancid, but with Fruits and Vegetables, their nutrients and texture are largely depleted over time. Thus, bargain bins at the supermarket with post-dated items are mostly a complete waste of money, because whatever vitamins that were once in them are lost.

Fresh fruits and veggies last a long time. Use the expiration date as a guide. As long as there is no mold on the item than it is still fit to eat. If the item is starting to wilt then it should be cooked soon. Probably in some type of a recipe with liquid so the item will rehydrate and taste good. If an item starts to have soft or slimy spots on it just cut them off and use....talking about fruits and veggies. Any meats or cheeses with that problem should be discarded.

Carrots, parsnips, etc. keep very well. The date is the last date they can sell it. But if the veggie seems okay and is not slimey or soft, then it is okay. Carrots will also sometimes grow what appears like gray hair all over it, again if the flesh is solid with no soft spots on it, then just scrape the hairs and the peel off and it will be fine.

Make sure they don't have any soft spots or discoloration. Also, make sure they don't have a funny smell. If they look and smell okay, they should be fine. Expiration dates are only there to give a general idea of when a product is no longer guaranteed by the manufacturer, not when the product is actually going to go bad.

General rule of thumb: If you're worried about something being spoiled, it's a good indication that you shouldn't eat it. Cheeses (and wet cheeses in particular like ricotta) are products to watch out for because they contain natural bacteria as a result of the curd forming process. Because they're sour by nature, the freshness of cottage cheese and ricotta often can't be determined by taste alone. Trust the expiration date on the package. It's there to protect both you and the grocer.
