I grew up eating vegetables for breakfast ! We always had a garden and we would have sliced tomatoes, hot peppers, cucumbers, onions and radishes with 1 egg and 1 peice of bacon and some biscuits sometimes gravy too. No one in my family was ever overweight and I attribute this to all the fresh vegetables we ate at every meal and very small portions of meat.

You can eat veggies in your eggs- examples: bell pepper, onion, mushroom, tomatoes etc. Also - potatoes are great for breakfast examples: hash browns etc.And I do all of the above - not daily but at least once a week - usually the weekend. Hope this helps some!!

Sure do. Usually it's with a veggie omelet but I also add peppers and onions to breakfast potatoes. Spinach is also great with eggs (eggs Florentine)

Quiche has many variations with veggies as well. I love broccoli quiche.
