I love black pepper and chilli is good, but if i have to pick a favourite it has to go to cummin. Cummin has a warming homely sort of glow to it. it adds something to a chilli con carne, it makes a great curry, it is tasty comforting and moreish.
(And it is a spice and not a herb)

Just picking one is tough. I'd either have to say garlic or oregano. They both add something that is absolutely outstanding to food!

Hmmm...tough one. I put fresh ground black pepper in pretty much everything, but it's not my favorite spice. I'd have to list my faves in this order:

1) garlic
2) basil (esp. fresh)
3) black pepper
