Too long for one day. Day and a half. I think it is about 16 hours.

Most of the road is freeway or motorway. Thredbo to Sydney is about five hours. Use the new western ring road from the Hume Highway to Hornsby and the Newcastle Expressway. It is a little under 1000km from Hornsby to Brisbane. With stops that will take you about 12 hours. Unless you like 17 hour drives, I would suggest an overnight stop.

11 -12 hours to Sydney, on the road. At least another 5 hours from Syd to the Snowies. Call it two and a half days on the road.
