or going back to the cockroach, try to show the customer that you're eating it so he/she will be convinced that it really is edible.

Customers already have needs. Maybe they have issues with their image, maybe they care about their health, maybe they want to be cool, or maybe they are just hungry.
For example, water cockroaches are a traditional village food in China (my friend used to eat them when they grew up in a small village in China).
Insects in general are also low fat, high in protien, a healthy meal.
It is simple a matter of matching the qualities of a cockroach to the customer.
Maybe it is a matter of processing and presentation. For example, crushed into a powder or a paste.
Maybe it is a matter of labelling. Like red and pink salmon. By taking a type of salmon no one ate, and labelling it as RED SALMON, suddenly it became popular. Or maybe change the name. For example the Chinese gooseberry became Kiwi Fruit and become popular.
So lets process the cockroach, label it All natural protien. Talk about the ancient chinese wisdom in eating cockroaches and how it makes the people of some villages live longer (Hong Kong people outlive everyone else in the world).
Aim it at health freaks, charge them a high price, and there you go.
