To attract bees and other insects or animals that want to drink the nectar. They'll help spread the pollen around to other flowers and so help with the plant's reproduction. Some carniverous plants, like the pitcher plant, have a sweet scent to attract insects in order to eat them.

Flowers have evolved scents and perfumes to attract pollinating insects to the flower. The perfume is not always pleasant: the world's largedt flower, the Rafflesia of SE Asia, is pollinated by flies, and so to attract them, it gives off a scent reminisent of rotting flesh.
