Yes, it can happen to kittens that are 8 week old. But it could also be something else altogether. She doesn't sound like she is doing too good, she is definitely getting dehydrated.

I had never heard of fading kitten syndrome, so I did a quick Internet search.
Yes, fading kitten syndrome can affect them anytime between birth and 9 weeks old.
Is she the only one you have from this litter? If not, are the others okay?
Has she seen the vet yet for a well-kitten exam and had her first vaccinations?
Is she drinking water? Going to the litter box? Any chemicals or household plants she could have gotten into?
Can you tell if she has a fever or is she cool to touch? Kittens normal body temp is 102 degrees, so if she feels cool or warm to your hands....emergency...tonight.
She is so young and has been sick for two days. If you can already see she is loosing weight...she doesn't have a lot at her age to loose safely.
Can you call your vet and see if they have an on-call vet or referral to the closest emergency vet? See if you can speak to someone tonight..a vet or at least a veterinary technician..and see if they feel your kitten should be seen tonight or if she can wait until morning. Personally, my gut feeling says tonight.

Although the other posts have said it, now is the time to take the kitten to the vet. Call your vet first - many vets prefer you call them before taking your cat to an emergency clinic, and those that don't often have a number you can call after hours on their answering machine. The trouble with sick kittens is they can die very quickly. Fading kitten syndrome is only one possibility and a vet is the best option for finding out what is wrong. Don't wait. Hope things turn out okay.

You can go to the vet at night. There are emergency vets in most towns. Pack up your kitten and get on the phone. Either look it up in the phone book, or call your regular vet -- the answering machine of a regular vet should tell you the phone number of the all-night emergency vet.
There are a lot of things that can go wrong with a kitten, but not eating and not moving around are bad signs : - (

Sounds like she has eaten something she shouldn't have. Until you take her to the vet, there isn't much you can do except try to get her to take some water so she doesn't dehydrate. Try using a syringe or dropper or if you don't have that on hand, try with a teaspoon. Be careful she doesn't choke, kittens this age are quite delicate. I hope she makes it.

I always test all kittens for Feline Leukemia. Kittens also get into other things, and can get sick too. I've lost quite a few over the years to leukemia tho. two days is a long time to be sick. if your kitten is this bad, is needs to be in the hospital over night for support.
kittens can be sick at any age. Its important to be watchful and take them in before it becomes life threatening.
I hope it makes it through the night.

Most areas now have emergency veterinary facilities that are open when regular veterinarians are not. If you're really that concerned, then take her to the ER! Be prepared to pay out the wazoo though, VetERs are expensive.
