Linen is very smooth, so it's preferred by people who do a lot of portraits in a realistic fashion. I would think impasto technique would be a waste of money, but any very smooth style of painting would be worth considering in linen. It is the most expensive.

I have painted on both and have not found any real difference. I have found that the quality (weave and thickness) of the cloth you are using is of more influence than the actual stuff it is made of.

Granted when sizing the cotton or linen there is a difference but when the gesso has dried there is little difference left.

linen is a much finer weave. it tends to be more suited for portraits because of this.

it has to do with the tightness of the weave which will give you a smoother surface to accept the paint.
