you scramble eggs that water all of a sudden appears from no where, even though you didnt add any water to scramble them with? It never fails that there will be water in the bottom of the dish that the eggs are sitting in....I hate it!

Are you scrambling them in a bowl first or directly in the pan? I recommend you spray the pan first add the eggs and start scrambling them. My bf does the bowl thing and they always come out watery.

The water is condensation from adding hot eggs to a cold dish. Warm the dish in the oven and keep it on a warming tray. Make sure the eggs are fully cooked, tight, that will cut down on moisture.

I don't know the physics of it, but you're overcooking your eggs. You should take them off the heat when they're still a bit mushy. They will continue to firm up and voila! No icky water!

There is no way to stop it, unless you increase the heat of the skillet, and add a little oil. Like everything water is part of it.
