Annetto seed extract is used to color it as they found yellow cheese appears to be more appealing to purchasers. You can try white cheddar and yellow cheddar next to each other and taste no difference (as long a mildness is the same ) - it is not harmful and adds no calories, only adds to appearance.
When you see "white cheese puffs" or "yellow cheese puffs" - or any other item similar, they have the same ingredient/taste, just the extra coloring in the yellow.
