Eat only the cotton tails. Jacks have been known to carry diseases and are more prone to disease as well. Shame though because jacks sure seem to outnumber the cotton tails. They are delicious though. Be wary of pellets if you use a shotgun. I use my bow, more of a challenge, but it ruins more of the meat. Give and take I guess. I usually grill mine up too just like chicken. Anyway, go pop a couple of cottons and chow down!

Jacks are just a bigger rabbit...they eat good. Like any animal, the older ones ... cotton's or jacks.. get kinda tough. The solution is in the ways you cook them..
Personally, i like that the animals come in 2 different sizes.. i can eat a whole cottontail, 2 of us are satisfied with one jack..
I ate a lot of both over the years.. my dad would hunt rabbits any month that had an 'R' in it .. he waited until frost had fallen 3 or 4 nights in a row, and we would all go rabbit hunting...that used to be how the 'season' was determined,.. [by the first frosts,] .. it ended when the short grass started coming up.

You can eat jackrabbits, there's nothing wrong with them. I always heard they were tough and didn't taste good but I don't like to kill things I don't eat so when I went jackrabbit hunting I cleaned them up and they were just fine. I fried some, grilled some and made stew out of some. The stew was really the best since it does tenderize almost anything. A plus for jacks is the fact that they are bigger than cottontails and you get more meat!

The meat is excellent. It is a light meat with low fat. Used to be recommended for heart patient due to the low fat. Try buying some in the store. You'll find they charge plenty for it. Probably around 3-4 bucks a pound.
If you can find a place that will let you rabbit hunt, give it a try. As far as jackrabbits, I have never had any but I am sure the texture would be different that a cotton tail rabbit. They can be fixed alot of different ways.

In general, yes, Jack rabbits are good to eat. I used to hunt them around San Antonio and we had to watch for a worm infestation that we called WEELS. I don't know if that is the correct spelling or even if that is the correct name for the infestation but that is how we pronounced it. They formed lumps under the skin of the jack rabbit. If we found one with the lumps, we just didn't eat that one, we left it as a treat for the local coyotes. Cooking may have killed any worms but we just didn't take a chance. Jack rabbits taste just like cotton tail rabbits but tend to be a bit more tough. When we killed a jack rabbit, we would cook them using a wet method such as stewing them or making rabbit and dumplings. I tried grilling them but found them a bit too tough for that kind of cooking. I would guess if you got a young one it would be just as tender as a cottontail, though.

Yes, you can eat them. I have never eaten a jack but I've eaten plenty of cottontails. You can cook them however you want but I grill them. You gotta watch who you listen too. Let me tell you. Lots of animals like that carry disease. That why you COOK them. Rabbit kinda tastes like chicken, it kinda is a little sweeter or something to me though. Damn good though. You should ask one of your local gamewardens and they will give you better info than any of us. If your in South Central Texas, their was a disease scare like 50 or 60 years ago where they recommended that you not eat them. I think they are fine now though..

You didn't say where you were so I have no idea if they are safe. I hunt them and eat them, they are very good. I prepare them just like fried chicken. They taste like an open range chicken.

I dunno about jack rabbits but eastern cottontails are great eating . I have heard years ago that rabbits carry tuleramia and to check for that look at their liver for white spots. Its spread by ticks . Its recommended to wear rubber gloves when skinning rabbits .
But I have eaten every rabbit I have killed and they were tasty and fairly tender. Just cook them well and they are great

cotton tails............... mmmmmmmmmmmmmmmmm.hunt rabbit on regular basis love them like fried chicken.. it dont taste like chicken . its better chicken tastes like it. i also used to raise meat rabbit which are better tasting than wild.. not sure about jacks though never tried to eat one
