This is a very good recipe. I gave it to a lady that lives in Texas (I live in Washington state) and her parents now live for her visits to make the muffins for them.
This recipe is from my Current Gold Star Collection cookbook.
Fortnight Muffins
3 c flour
1 c sugar
3 tsp baking soda
1/2 tsp salt
3 c whole bran cereal
1 c water
2 c plain yogurt
2/3 c vegetable oil
2 eggs
1 to 1 1/2 c raisins
In a medium bowl, stir flour, sugar, baking soda and salt; set aside. In a large bowl, stir cereal and water; let stand for 2 minutes to soften. Add yogurt, oil and eggs; beat well. Stir in dry ingredients just until moistened. Quickly stir in raisins. Bake immediately or cover tightly and refrigerate up to 2 weeks, baing as needed. (Do not stir stored batter before baking.) Fill well-greased muffing-pan cups. Bake in a preheated 400º oven for 15 to 20 minutes or until a toothpick inserted in the center comes out clean. Makes 24.
I altered that recipe by substituting 2 cups pumpkin in place of the 2 c yogurt and 1 c buttermilk in place of the oil on occasion. You can also substitute applesauce for the oil on occasion if you'd like a change.

Blueberry Muffins Recipe
Ingredients:
2 cup flour
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon grated lemon peel
1 cup skim milk
1/4 cup egg substitute
1/3 cup margarine, melted
3/4 cup fresh or frozen blueberries
Crumb topping (recipe follows)
In a large bowl, combine flour, sugar, baking powder and lemon peel; set aside. In a medium bowl, combine milk, egg substitute and melted margarine.
Stir mixture into flour mixture just until moistened; gently stir in blueberries. Spoon batter into 12, 2-1/2-inch muffin pan cups lined with paper liners. Sprinkle crumb topping over muffins. Bake at 400-degrees for 15 to 18 minutes or until lightly browned.
Crumb Topping:
In a small bowl, combine 1/2-cup flour and 1/2-cup sugar. With a pastry blender, cut in 1/4-cup margarine until mixture resembles coarse crumbs.

Now upload the egg to the butter/sugar combination and beat till nicely included and set aside. In a separate bowl combine the dry factors: flour, salt and baking powder. Fold 0.5 the dry factors into the egg, butter and sugar in a huge mixing bowl. Stir in 0.5 the milk and then repeat the technique with the the rest dry element and milk. upload the teaspoon of vanilla and supply the batter a sturdy stir. Now gently fold the blueberries into the batter. Spoon the batter in to greased muffin tins. Fill the tins very almost point to the authentic. mixture 2 teaspoons of sugar with one million teaspoon of cinnamon and sprinkle on authentic of the muffin batter. Bake in a 375 degree F pre-heated oven for half-hour. in case you may stand to attend, enable the truffles to sit down back after baking for 20 to half-hour, in any different case get 'em on a similar time as they're warm! Makes approximately 12 medium sized truffles.
