I usually cook a three pound roast on high in the crock pot for 3 to four hours or 4 to 5 hours on medium. I always brown it on all sides first. It always turns out fork tender. I have never cooked that small of a roast but would think that if you brown it
first, all you would need is 2 to 2 1/2 hours. You could probably eat it after 1 1/2 hours, but it would be really fall apart tender after the longer cooking time. I am not an expert but I have been cooking roast beef, mashed potatoes and gravy for over 30 years. I think some of the advise you are getting is going to give you beef jerky.

I'd cut the vegetables in small chunks, (they'll cook quicker) place them in the bottom of the slow cooker, add a cup or so of boiling water place the pot roast on top. Cover and cook on high for 3-4 hours.

It takes a while for the crock pot to get cooking so I don't think 2 hours would be quite long enough to give you a tender roast.

We cook the roast about 4-5 hours on low...with a slice or two of onion and a measured cup of coffee. the veg we cook after the roast is done, using the liquid from the crockpot, but on the stove.

check for meat tenderness with a fork.

5 hours...

Put some of the vegetables under the roast to provide even cooking and don't take the lid off at all! It loses SO MUCH heat even if the lid is off for even a few seconds.
