Most seminaries require that the student learn both Greek and Hebrew, Coptic and Aramaic are also normally offered. You also learn various tools of Biblical criticism, the history of christianity, different theological models, usually a person gets a history of their denomination, and other various intense studies of various books of the Bible, theological systems, etc.
This information isn't kept from parishoners on purpose - it usually isn't disseminated. The reasons are varied, but usually it boils down to a few: The pastors themselves didn't care to study and integrate their education into their life of faith, so they take the tests and forget about the information (a form of arrogance). Another reason is that today's Christian climate has become increasingly conservative and anti-intellectual, so there are job security reasons behind it. One other reason worth mentioning is that pastors often either do not have time or take the time to train educators within the church.

There is no wisdom restricted to pastors only. The same Spirit Who dwell in them, dwells in other believers. The only thing different with a true pastor, is the annointing to be an undershepherd of God's flock. With that comes certain ordained authority of the elder (overseer).
But, when it comes to Godly, Biblical wisdom, we are all granted access to whatever the Spirit chooses to teach us as well as far as we want to be taken.
