Does he get up at night to drink? Diabetes is a distinct possibility. You could probably get the doctor's office to test his urine for sugar and specific gravity tomorrow morning. Collect a specimen as soon as he wakes up.
Another possibility is diabetes insipidus, a disturbance of the pituitary gland causing lack of antidiuretic hormone, thus the person cannot concentrate his urine.
The most common cause is merely habit. Some kids just habitually want to drink all the time. But the other conditions must be ruled out before you make this diagnosis.

With the newer types of insulin these days, diabetic diets aren't necessarily as restrictive as they used to be. Read here https://tr.im/XJDwb
As with any medicine or diet change, you should discuss it with your doctor. Fruits, both fresh and dried, have a natural sugar in them that will raise blood sugar levels, so be careful about eating too much. Not sure about the nuts. Moderation is always the key. I've been diabetic for 18 years and just recently changed insulin types. I love it because it gives me more freedom in when and what I eat.

My first thought was what is he drinking? if he is drinking soda, many times the soda it's self can cause dehydration.is he eating a lot of salty snacks? chips, crackers and many snack foods are loaded with salt.Lastly how much is he really drinking ? my 2 yr old grandson has a cup with him all the time, but to be honest i think he spills as much as he drinks.Have you noticed how frequently and how much urine he is putting out?
I think if it were me , I would start a journal..just jot down a few facts such as what he has had and how much he has consumed, how many times he has pottied, his activities..has he been out running in the heat etc. This may help your Dr with a diagnosis

Vitamin B6 deficiency symptoms are of extreme dry mouth with in an inability to quench thirst no matter how much water you drink.
Either buy him a good multi B complex supplement or, loads easier would be to give him more foods rich in this vitamin.
ie: cantelope, rock melon, peanuts, bananas, brown rice, sunflower seeds, broccoli, wholegrain breads and cereals.
In other words, pump up his intake of fresh fruit and vegies, nuts and seeds, wholegrain cereals and breads and try to cut down on white breads and cereals and other sugar laden and nutrient deficient foods.

I would say that excessive thirst is one of the first signs of diabetes. Is he also using the bathroom more often?
Make sure that you tell the doctor when you take him. Good luck.

Don't freak out until you see the doctor, but excessive thirst is a sign of diabetes.
