You've got it part right, it's just a couple of small mistakes. J'ai vu beaucoup des poissons ... it would translate literally to 'I saw many of the fish'.

J'ai vu beaucoup de poissons.
Vu comes from voir.
In French, you say un poisson, deux poissons
After beaucoup, you say de, even if the next word is plural.

as everyone has said, the past participle is vu, but the sentence would be "J'ai vu beaucoup des poissons"
