Cornmeal - absolutely the best for catfish:
Classic Fried Catfish
3/4 cup yellow cornmeal
1/4 cup all-purpose flour
2 teaspoons salt
1 teaspoon ground red pepper
1/4 teaspoon garlic powder, to taste
6 (4 ounce) farm-raised catfish fillets
1/4 teaspoon salt
vegetable oil
COMBINE first 5 ingredients in a large shallow dish.
Sprinkle fish with 1/4 teaspoon salt; dredge in cornmeal mixture, coating evenly.
POUR oil to a depth of 1 1/2 inches into a deep cast-iron skillet; heat to 350 degrees;.
Fry fish, in batches, 5 to 6 minutes or until golden; drain on paper towels.
Serve with some mayo/Tabasco sauce or fresh lemon juice. Good Luck!

What I use is.... equal amounts of cornmeal and self-rising flour,
then add 3 tablespoons of ground Cinnamon powder, and 2 teaspoons of black pepper. Put this in a bowl with a tight lid, and shake the heck out of it, until it all mixes up real good, then soak the catfish nuggets in milk, and dip into the flour mixture, and deep fry. Yummyyyyoooooo..!!!!!
If you want it a little more crunchy, then crumble up some corn flakes and add to the mixture.

A mix of flour and cornmeal (seasoned to your taste.
Soak fish in milk... drain... dredge in flour and shake off all excess... dip in beaten egg then in a flour/cornmeal mixture... let stand a few minutes on a wire rack before frying.

My Dad makes the BEST bass nuggets in the world...he just "eyeballs" the ingredients for the batter, so I don't have the exact amounts, but it comes out AMAZING! Give it a try!
Cut fillets into 1 inch squares. Dredge chunks in a batter made of:
self-rising flour
garlic salt
pepper
beer
Deep fry (careful - they don't take long to cook) using peanut oil.
You won't be disappointed!!!!

I'd use cornmeal;-} traditional.
You could add a little cajun spice.
Cayenne, Red Pepper, or Paprika.

i always season my with Chef Paul Prudhommes blackened redfish magic then dredge through cornmeal then deep fry
