I would make fajitas with some, and with the rest, I'd chop them & put them in a freezer bag to use in chili throughout the fall.

1. Fajitas
Thinly slice 3 bell peppers, 1 medium onion, 2 large chicken breasts. Heat a cast iron pan until it smokes a little. Then quickly add 3 TBS of olive oil and the onion and meat. BE CAREFUL, the oil will splash, use a large pan lid to shield your face. The reason that you MUST get the pan this hot is to seal in the juices of the meat. Then after the chicken is cooked, add the bell pepper and turn off the heat. Cover with a lid for about 5 minutes. Serve immediately.
2. Stir Fry, use any number of veggies including the bell pepper, 1 tsp garlic juice, 2 tbs of soy sauce, and meat and toss in a wok until cooked.
3. Burger Topping
Dice 2 bell peppers, 1- 8 oz package of mushrooms, and half a sweet onion. Heat a pan on medium-high and add one TBS of butter. Saute the veggies until tender and use to top a burger. Make sure to top with cheese while hot.
To store them, keep them in a paper bag whole (Don't wash or cut up) until you are ready to use them. They should stay fresh for up to a week.
Hope this helps!

10 is a lot. Give a few to your neighbors. You can make a Greek Salad. Peppers, tomatoes, cucumbers, Feta cheese, Kalamata olives, onions, olive oil and balsamic vinegar. But if your husband does not like pepper steak or stuffed peppers, he's not likely to care for this salad either.

Well Firstly lets not focus on one dish cause 10 are alot and stuffed peppers are out. id definately take 2 or 3 slice em up and eat with a creamy dressing as a side. if you can roast them, this is delishious on many dishes like sausage and peppers. If you like them you can make a nice tuna or chicken salad and serve inside. Like someone else pointed out you can also share the wealth and make friends and give some away.

This calls for red peppers, but might work with green:
Cook 4 slices of bacon, dice & discard drippings, except 1 tbsp.
Add 1/2 cup each, chopped celery & onion, & 1 clove garlic.
Cook on medium, stir, until onion soft & bacon crisp.
Beat 1 lg egg & 2 tbsp chili sauce with fork in bowl.
Add bacon mixture, can of black beans rinsed,
1 cup of cooked rice, 1 medium tomato diced,
& sprinkle with salt & pepper.
Stir, then spoon mixture into 3 quartered pepper shells.
Arrange in single layer in 9x13 baking pan.
Pour 1/3 cup of chicken broth around pieces.
Cover with foil & bake in 350F oven 30-40 minutes.
Remove foil, test peppers should be tender-crisp. Combine:
1 cup crushed tortilla chips & 1 cup grated cheddar in bowl.
Sprinkle over bean mixture, bake uncovered for 10 minutes.
Cheese should be melted.

Hello:
How about cutting them up and using them in a seven layer salad,or other kind of salad that you like? If salad isn't your thing than you could always cut up the peppers and serve them with ranch dressing and dip them into the ranch dressing or vegetable dip along with some other veggies and have a nice veggie tray! ;-)

Eat them? HA, just kidding! Too bad they weren't red, orange or yellow: green ones are not all that good...but if you want to make them good, cook them! Make a tomato sauce and dice them up and put them in, or dice them up and put them in a fish stew, or stir fry them or something!
You can also slice them and dip them in some different sauces!
