I have some cod and no clue what to do with it. I think I would like something with a little more kick though then just lemon pepper...not something burn your mouth spicy but something with actual flavor to it.
Also, can a nine month old eat fish?

.Thaw the cod. Make simple white sauce with 3T butter 5T flour AND 2 CUPS OF milk....heat to thicken with salt/pepper. Add cheese like cheddar to make a cheesy au gratin sauce BAKE 400f FOR 20 MINS Cool and enjoy

Fish au Gratin

Ingredients.
4 cod steaks,2 oz or 50 grammes white breadcrumbs,salt,pepper,1 oz butter,2 oz grated cheddar cheese,pinch of mustard powder.

Preparation

Grill the breadcrumbs until golden and leave to cool.Salt and pepper the steaks on both sides and put the butter on one side only. Place the steaks on foil under a medium grill butter side up for 6 to 8 minutes. Then turn the fish over and cover with a mixture of the breadcrumbs,cheese,mustard,salt and pepper and grill for a further 6 to 8 minutes. Garnish with a few lemon twists and serve. This goes nice with jacket potatoes and green beans


i`ve eaten year old fish i think 1 year is the limit for freezing and still being ok

I steam my cod by placing Romaine lettuce under and over it in the steamer and steam it about 20 minutes - depending on the size of the piece. It comes out beautifully and then I either drizzle some raspberry vinaigrette over it or just serve it with homemade tartar sauce. The lettuce will come out tasting like a very mild spinach. My tartar sauce recipe is mayo, dill, onion powder, black pepper and a little pickle relish. Before hubby was on a low-carb diet, I'd serve it also with home baked fries. I'd spray steak fries and then make a mixture of a little sugar, black pepper, paprika, and onion powder. and toss the fries in that. Then I'd put them on a mesh screen and bake them over a cookie sheet until golden. Very good and low-fat. You don't want the cod to be tough so make sure you don't over-cook it.

as long as you make sure there no bones she can eat it, l bake all my fish as its soooo much easier.
place fish on peice of foil, put a dob of butter, salt and pepper, chopped spring onions, tiny bit chopped chilli and slices of lime or lemon, fold over foil to a envelope and bake in oven for around 15 / 20 minutes, also if its a whole fish l stuff it with same ingredients.
