What is a good recipe for a family that is fairly quick and economical to make?

Mexican Soup


In a crock pot (or stock pot if you want to use the stove), cook dried pinto beans according to directions. When beans are almost fully softened, add approx 1 clove of garlic (I use minced).
Brown ground beef in skillet. Drain.
When beans are cooked through, add ground beef,1 packet of taco seasoning, rice (I honestly use minute rice here, but its your choice. Also, make sure you have enough liquid in you beans to account for the rice absorbtion! More liquid if you want a lot of broth in your soup, less if you want it thick.)and rotel tomatoes.

Cook on med.-high until rice is cooked through.


The quantities on the soup are fairly simple. For every pound of dried beans, I use a pound of burger and 1 cup of uncooked rice. One pound of beans/ meat will make approx 8 very nice sized servings.

Ok, that said: I cook my beans in the crock pot on low all night and all the next day while I am at work so they are really tender. When I get home from work, I put the beans in a stock pot and bring to a boil, cook the meat and add it, the rice, the rotels, and seasoning then. Again, I use minute rice so it will be done faster. (Usually about 15 minutes or so after all is added.)

Buy a whole chicken. Wash it, take out the guts, pat dry.
Place chicken in casserole dish, rub with olive oil and sprinkle with Lawry's seasoning or spice of your choice. Place a pad of butter or two inside the chicken. Bake at 400' for about an hour depending on size of bird. About half way through its great to baste it with the juices in the pan to help brown it.
Serve with some rice and broccoli. This is my daughters favorite meal and it's healthier then most too!

Spaghetti with meat sauce, garlic bread, and a green salad.

Jar of PregoSpaghetti sauce
Can of diced tomatoes
Italian seasoning
Worcestershire sauce
1 lb. Ground beef
Angel Hair Pasta

Start cooking your diced tomatoes in a sauce pan and add Italian seasoning and worcestershire. Add Prego.
Brown seasoned ground beef and drain.
Add to sauce. Simmer together for a few minutes on low to mix together.
Serve over angel hair pasta.

oh boy oh boy i got one youll all love ..... get ya self some chicken breast one side of breast per person wash , clean, set aside .... mean time mix sour cream swiss cheese together in a bowl . make ya self a box of boxed stuffing mix according to directions.... put the chicken in the baking dish spread the cheese and sour cream mixture over the top of each breast nice and thick leaving your self just a bit for the topping then take the stuffing spread on top of the cheese mixture using all of the stuffing between the chicken peices when all done with that take a bit of the cheese mixture just put a touch of it on top then put in oven for about 45 minutes on 350 check make sure chicken is done should be good to go and enjoy .... will be a big hit for sure ....enjoy!!

HOT ZUCCHINI SOUP

4 cups sliced zucchini
2 cups grated cheese
2 lbs pepperoni
2 pkg onion soup mix
2 8 oz jars spag sauce

Mix soup and sauce, add zucchini, pepperoni and cheese. Cook over medium heat til zucchini is done (about 20 min.). Serves 8
CHINESE CHICKEN WINGS

2 scallions
1/2 cup water
1/4 cup soy sauce
1 - 2 tbs brown sugar
1/4 cup sherry
1 - 1 1/2 lbs chicken wings

Simmer for 30 minutes covered. Uncover for 15 minutes or so longer. Serve over rice.

SWEET AND SOUR SAUSAGE

1 green pepper
1 onion
3 tomatoes
1 lb smoked sausage (kielbasi)
1/2 tsp ginger
1 tbs cornstarch
1 tbs vinegar
1 tbs soy sauce
1/2 cup apricot preserves

Cut sausage, pepper and onion into pieces and saute for 5 minutes. Combine cornstarch, ginger, vinegar, soy sauce and apricot preserves. Stir into sausage mixture. Heat to thicken. Add 2 cups drained pineapple chunks. Heat. Serve over rice.

HUNGARIAN GOULASH

2 - 3 lbs stew meat
1 cup ketchup
1/2 cup brown sugar
2 onions chopped
1/4 cup worcestershire
1 tbs dry mustard
1/2 tsp cayenne
1/2 tsp paprika

Brown meat, add onions and rest of ingredients. Cook about 2 hrs. Serve over hot buttered noodles.
SAUSAGE CASSEROLE

2 lbs cooked link sausage
1 can corn
1 can tomatoes
chopped green pepper
chopped onion
cornstarch
corn flakes (crushed)

Cook sausage well done and set aside. In ovenproof skillet, sautee peppers and onions. Add corn with liquid, tomatoes and salt and pepper. Bring all to a boil and then thicken with cornstarch and water. Arrange cooked sausage on top and then sprinkle with crushed corn flakes. Bake at 350 until bubbly and serve over mashed potatoes or buttered noodles.

Tacos, just buy the taco bell kit and beef or chicken, sour cream, green onions, and cheddar cheese, lettuce, and tomatoe make a taco salad or tacos. They are soo good. One of my favorites when I'm trying to make my family a quick meal!

1 Large can beef stew
1 can biscuits

Place beef stew in casserole dish cover with biscuits and bake until biscuits are done. Have a green salad on the side.

Pizza!

Buy a pizza crust, a jar of tomato sauce, shredded mozzarella, and plenty of veggies.

Its fun for the kids to spread on the tomato sauce and cheese and top it with colorful veggies. Plus, its healthy!
