Substitute undrained, plain yogurt or sour cream, whisked with a little milk to thin, in recipes that call for buttermilk.

Or combine a tablespoon of white vinegar or lemon juice with enough milk to make 1 cup. Set the latter mixture aside for five minutes before using.

Hi !!!
If your recipe calls for buttermilk...just use this recipe to make buttermilk...

Homemade Buttermilk

Ready in: < 30 minutes
Difficulty: 3 (1=easiest :: hardest=5)
Serves/Makes: 1 cup

Ingredients:
1 cup whole milk
***ONE of the following***
1 3/4 tablespoon cream of tartar
1 tablespoon white vinegar
1 tablespoon lemon juice

Directions:

Add acidic ingredient (tartar, vinegar or lemon juice) to the milk and stir.

Let stand at room temperature for 15 minutes. The milk should start to curdle. Stir well before using.

A combination of plain yogurt (3/4 cup) and whole milk (1/4) cup can also be used to replace a cup of buttermilk in most recipes.

I think you can use milk and add a tablespoon of vinegar. The buttermilk has acidity which adds to the leavening of the cake. If you don't use buttermilk you have to add the acidity.

Add 1 tablespoon of lemon juice or 1 tablespoon of vinegar to a cup of milk and let it sit for 15 minutes. It works great.

Everyone mentioned that you can make buttermilk by adding vinager to regular milk. I thought I would include a link to a page with more substitutions on it, in case you ever are in need.
