I am looking for a great recipe for biscuits that are puffy and moist. I dont want any cheese or anything added, just a plain old biscuit recipe. I have one but the biscuits seem like they are missing something and they dont get real puffy. Any ideas why? The batter seems a bit loose maybe to much fluid?

I buy Bakewell Cream and make the recipe that's on the can. They are always really puffy and soft. Try it. You can get the Bakewell Cream whereever baking powder and baking soda is located. It's an old product that has found a new market again.

I don't make biscuits anymore, but when I used to make them, I tried several recipes before I found the best one. It is the one in the Fanny Farmer cookbook.

The absolute best biscuit texture comes from using lard; I don't eat lard, so I freeze/chill the butter and use water with ice in it to keep the condition firm and the texture a little stiff. I've also used a cold metal bowl to mix it in, too.

Not a recipe, or home made, but I really like Pillsbury flaky biscuits in the can.
