fix him something that reminds him of the good old days when mom used to cook.....I read somewhere or seen on TV that meatloaf, mashed potatoes and gravy is a top seller in dives, diners and cafes (food network) you could also impress him with steak and potatoes (if he is a steak and potato guy) maybe chicken.....lasagna is also easy and yummy.....have you asked him what his favorite is, call his mom, brother sister etc and ask...then go from there

These recipes are so easy and delicious:

Red Lobster Shrimp Scampi (CopyKat Recipe)

1 C. White Wine
1/2 C. unsalted Butter (do not use Margarine)
3 tsp. minced Garlic
1 lb. Shrimp, peeled and deveined

Mix ingredients together and put it all into a casserole dish. Bake at 350 F. for 6 to 7 minutes. Be careful not to overcook the shrimp. The shrimp is done when it has turned
pink. Serve over a thin spaghetti (such as vermicelli) with asparagus and a tossed salad. ( If you think you need a bit more scampi sauce, saute 1/2 tsp. garlic in 1/8 cup of butter. Stir in 1/4 cup of wine.)

Note: Red Lobster Restaurants now use a prepackaged mix. This recipe was suggested by a former Red Lobster Chef.

French Silk Chocolate Pie

1 ready-made pie crust
3 oz unsweetened chocolate, cut into pieces
1 cup butter, softened (do not use margarine)
1 cup sugar
1/2 teaspoon vanilla
4 eggs

Heat oven to 450 F. Make pie crust as directed on box for One-Crust Baked Shell using a 9-inch glass pie pan. Bake 9 to 11 minutes or until light golden brown. Cool completely, about 30 minutes. In 1-quart saucepan, melt chocolate over low heat; cool. In small bowl with electric mixer, beat butter on medium speed until fluffy. Gradually beat in sugar until light and fluffy. Beat in cooled chocolate and vanilla until well blended. Add eggs 1 at a time, beating on high speed 2 minutes after each addition; beat until mixture is smooth and fluffy. Pour into cooled baked shell. Refrigerate at least 2 hours before serving. Garnish with whipped cream. Chill in the refrigerator until ready to eat.

Special Dinner for Two?
Ideas to make the evening more special.

Of course there are the old favorites...your most beautiful candlesticks, long tapered candles, your fanciest china, and
cloth napkins and perhaps flowers to brighten the table.

Steak for two
Roast potato medley
Fresh spinach and cranberry salad
Fresh garlic bread

Steak for Two
Marinate the steaks with your favorite sauce. While the Roast Potato Medley is cooking, grill the two steaks on an outdoor grill or in the broiler. Sprinkle with spices and turn over as needed.

Roast Potato Medley
Sauté one onion in olive oil.
Boil two potatoes until soft enough to cut easily.

In a roasting pan, add 3 Tbs. of olive oil.

Cut potatoes to chunks.
Cut one large sweet potato into chunks.
Pour onions and oil over potato mixture and mix gently.
Sprinkle with garlic powder, onion powder, salt and paprika.
Add other spices, if desired.

Bake for 40 minutes at 350 degrees, or until potatoes are roasted nicely (mix a few times to ensure consistent cooking).

Fresh Spinach and Cranberry Salad
Combine one package of fresh spinach (washed and shredded), with 1 cup of cranberries and 1/2 cup of slivered almonds. In a separate bowl or cup, prepare the following dressing: 1/3 cup Balsamic vinegar with 3/4 cup of olive oil. Add 1/2 cup of sugar and 1 tsp. of salt. Right before you are ready to serve, pour the dressing over the salad.

Fresh Garlic Bread
Slice one loaf of French bread and smear margarine on both sides. Sprinkle with garlic powder and place in oven for a few minutes until lightly toasted.

Light the candles and enjoy.

i suggest you cook something that YOU know very well so your meal will be perfect because you know the dish. recall all the times you guys ate together or talked about food. what does he like? but i'm sure, whatever you make for him will be special because YOU made it and YOU're his girlfriend.
