Sage is a must, then you can add mixed herbs, thyme, parsley. You can also add finely chopped onions, if you wish.

You don't have to if your stew is good. They should absorb the flavour of the stew and some of the herbs in it. If you want to use herbs in the dumpling mix, it entirely depends on the stew you are making. Parsley and chives are good in a lamb stew. Thyme is nice with anything.
To make your dumplings, use half the amount of shredded suet (usually Atora) to self-raising flour, a pinch of salt, and enough water to bind it. Mix well, roll out, tear off balls and sit in the top of the stew. Put foil under the lid to make a really tight close and do not open it for 20 minutes while your dumplings are cooking.
:-S Why is it that nobody else's dumplings recipe involve suet? Stew dumplings must be made with suet!

When I make my dumplings, I use chives and parsley. Here's the recipe I use and it makes wonderful light dumplings.
I cut my dumpling recipe down so it serves 2. It makes 4-5 dumplings. You can double the recipe if you plan on serving more than two people.
PARSLEY DUMPLINGS
1 c flour
1 1/2 tsp baking powder
1/2 tsp salt
1/8 c chopped parsley
1 T chives
1/8 c butter
1/2 c milk
Sift together the flour, baking powder and salt. Add the parsley and chives and mix well. Cut in the butter until it looks like coarse cornmeal. Mix in the milk with a fork to make a soft dough - stir as little as possible. Drop by spoonfuls onto the meat pieces. Simmer 10 minutes uncovered and then cover and simmer 10 more minutes. Serve at once.

herb dumplings
1 cup self raising flour
1/2 teaspoon salt
1 teaspoon mustard powder
50 g butter (cold, chopped)
1 tablespoon fresh parsley (chopped)
1 tablespoon fresh thyme (chopped)
1 egg yolk
1/4 cup milk
HERB DUMPLINGS.
Sift flour, salt and mustard in a bowl; rub in butter until mixture resembles coarse breadcrums (can do in a food processor). Stir in herbs, add egg yolk and enough milk to form a sticky dough.
Drop tablespoons of Herb Dumpling mixture into Beef Stew Cook covered, for a further 30 minutes, or until dumplings are cooked through.
Herb Dumplings
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 extra-large egg
3/4 cup milk
1/3 cup minced fresh parsley
1/2 teaspoon oregano or fines herbes
Prepare the dumplings: Mix flour, baking powder, salt, oregano and parsley in a medium bowl. Combine egg and milk and stir into dry ingredients. Mix gently with a fork until a soft dough is formed.
Drop rounded teaspoonfuls of dumpling dough on the surface of the beef stew (you should get about 15 dumplings); cover and simmer until dumplings are cooked through, about 15 minutes. Do not peek - the steam is what cooks your dumplings through.

I would recommend Parsley and a small amount of Thyme.
Thyme can be strong so be very careful until you have found your own taste.
I have also added curry powder to the mix. Not with the herbs mind, but it makes quite a nice change.

Depends on the meat you used. With beef I guess some thyme or oregano (if stew is tomato based), Maybe chives, I'm not sure, for chicken the sage sounds really good, Rosemary would be ok and of course parsley. Fresh cracked black peppercorns would add to it also.

get a box of jiffy mix, its next to the bisquick at the grocery store. Its cheaper than the latter. Follow the directions on the box, drop it onto the boiling stew. It makes GREAT dumplings, without having to work at it :)

I would suggest thyme, its a great herb with any meat.
and is my fave herb as its so versatile goes with anything
or if using lamb try a little rosmary.
beef is good with basil

Use fresh herbs when ever possible. Definitely thyme and one of my favorite, rosemary. If you want a more spring time flavor then go with dill and tarragon.
