I am making 'Field Salad' to serve at the wedding... it calls for mixed salad greens, which I will add spinach to; toasted walnuts; green apples; raspberry-walnut vinaigrette dressing; and gorgonzola cheese... I have never eaten gorg. but many people say it is strong and may be an acquired taste, but this salad got a lot of rave reviews at allrecipes.com.

I am not a cheese aficionado so I don't know if it would be best to substitute the gorgonzola for something like feta, or goat cheese; I believe these would be a bit milder. I also thought about blue cheese but I know a lot of people don't like this either... Trying to please a diverse crowd of about 40 people... WDYT?

Gorgonzola is merely Italian blue cheese. Stilton is English. Maytag is American. and so on.

I LOVE blue cheese, so your salad sounds FABU to me. You may want to offer a bowl of BC crumbles on the side, to be added as people desire.

I love cheese and think the salad sounds great, but I certainly understand where you are ocming from because most of my family wouldn't eat it either. So. My suggestionis to have a small bowl for the cheese right beside the salad so that people may opt to use it (or not). Definitely stick with the gorgonzola though, it will hold up well to the apples and vinaigrette!

That salad has become a classic......I make it with chopped up dried pears, dried cranberries or dried cherries (whatever I have in the cabinet that night) for the apples and always use either caramelized pecans or walnuts (available at Trader Joe's)..........the play of so many textures, flavors and aromas, you can't go wrong with this one.....I've made it hundreds of times, and all to rave reviews, you might want to cut back a bit on the amount of Gorgonzola called for in the recipe and have a side dish of it if guests prefer more of a pungent salad......I love Gorgonzola, and though it's rich, it's delicious.....Feta has kinda fallen out of favors with me, seems feta is on everything these days, got kinda old after a while........Your salad is gonna be a smash bomb!!! It'll be delish!!! Enjoy!!

Gorgonzola is very strong and has a bit of a heavy aftertaste. It's kind of like blue cheese but a little stronger. I think you could probably substitute the cheese since it will not appeal to everyone. I would try making a small batch of the salad and try it with a couple of different cheeses and see which one you like best. You could have a couple of friends over to taste test it too. I think the other cheeses you mentioned would be good substitutes.

This is one of my most favorite salads ever. I had never tried Gorgonzola until I ate it with field greens, candied pecans, raspberry vinaigrette and pears. The combination is exploding with flavor and flare. DO IT DO IT DO IT! If worse comes to worse the chunks of Gorgonzola can be picked out by the "hater".

Salad sounds grand, go with Gorgonzola, its strong but memorable.
