I want to make it with a food dehydrator and then vacuum seal it in a Foodsaver. Does anyone know how long I would be able to store it at room temperature?

it never lasts very long in my house lol
if it's air tight you can keep it for months/maybe a year +

I know it seems scary to eat "raw" meat, but technically after this process it is bacteria free. This looks like an excellent recipe for this jerky! All this recipe is doing is removing moisture through the use of cold air versus hot air. The idea of using cold air is not a new one, people have been doing it for thousands of years. It works for beef, chicken, fruit, fish, etc. Not only is it being dried but it had been marinated. This concoction of salts and acids wrecks havoc upon any bacteria on the meat in the first place. After 6 hours of marinating you can be well assured that nothing has survived. You can even eat the beef strips right from the marinade if you want to!!! Just remember that bacteria thrives on moist warm meat. A piece if salty, dry meat is not conducive to the live of a bacteria. I have been using this technique for a long time now and have never had a problem, except that everyone eats it all the day after I make it!! In complete honesty I have a jar of it sitting next to me as I type!!

My family eats it pretty quick, too, but if you use the food saver it should last a year or longer.
