A good desert I would suggest would be something involving fruit! Since it's still kind of summer and hot, a nice fruit desert is a nice refreshing finish to a big meal! Go to foodchannel.com and search for deserts, you should be able to find something quick (maybe even something you make the day before and freeze), but nice that you don't have to stress about! A nice fruit plate of chopped fruit served with this fruit dip:
FRUIT DIP
1 8 oz pkg cream cheese - at room temp
1 7 oz jar of marshmallow creme
2 tsp vanilla
Mix all together until no lumps and refrigerate until ready to use. Can be made the day before. The fruit can be cut the day before (except for apples which brown). I would use watermelon, cantaloupe, honeydew, grapes, strawberries, etc. Place a custard dish in the center of a plate lined with lettuce and place the fruit around the dish.

Pineapple Upside-Down Biscuits Recipe

1 (10-ounce) can crushed pineapple
1/2 cup packed light brown sugar
1/4 cup (1/2 stick) butter, at room temperature
10 maraschino cherries
1 (12-ounce) package refrigerated buttermilk biscuits (10 count)
Preheat the oven to 400 degrees F.
Grease 10 cups of a muffin tin. Strain the can of crushed pineapple, save juice for later. Combine the pineapple, sugar, and butter, and mix well. Divide the pineapple mixture among the muffin cups. Place a cherry in the center of each muffin cup, making sure cherry hits bottom of cup. Place 1 biscuit in each cup on top of sugar and pineapple mixture. Spoon 1 teaspoon reserved pineapple juice over each biscuit. Bake for 12 to 15 minutes, or until golden. Cool for 2 minutes. Invert the pan onto a plate to release the biscuits. Serve warm.

Chocolate mousse, , dead easy to make! Do a white chocolate and a milk or dark chocolate mousse and layer them in a beautiful tall cocktail glass. You could also put some raspberries in the white chocolate mousse. I made this for a dinner party a few weeks ago, I needed a dessert and was running out of time. I made it 4 hours before my guests were due to arrive and left it in the coolest part of the fridge until it was time to serve. It was a hit :)

Why not just make up some fruit kebobs and a yogart and choc. dipping sauce in the store. The fruit you can buy and cut up the night before and then put them on the sticks and then cover and put in frig and then the ygart sauce and choc. sauce they sell in the grocery store in the produce section just serve in a fancy bowl to dip into

Easy cheese cake! 1 8oz. cream cheese 1 8oz cool whip 1cup sugar 1 can cherrie pie filling & 1 gramcracker pie shell
put cream cheese ,cool whip & sugar in mixing bowl take ele. mixer and whip so it fluffy. put in pie shell. put cherries from pie filling on top & put in refrgerator until ready to serve
