Have a basic idea, trainers are a must, but what else. T-shirts, etc. We start at Lima, travelling on through - colca Canyon, Cuzco, and Machu Picchu. Then luckly me, off for a cruise round the galapgos for a week. Will the galapagos be hot?

First I have not been to South America (yet) so general information. You do not tell what time of year you travel!
Take T-shirts for most of your time, but bring a nice blouse too, several if you stay in hotels.
Take at least one warm sweater and several light long sleeved shirts. (More in winter, at least one in summer.)
Jeans will do for most destinations, but bring skirts too (South America has a rather traditional Roman Catholic population in places, and they would appreciate proper dress when you visit a church,) shorts only if you can not live without them.

According to this site the temperature on the Galapagos Islands is always round 70-80 F or 22-28 C, which I think it nice but not hot.

If you travel in the local winter, bring more warm layers, but even in summer you can expect to visit some high mountains or plateau, so a warm sweater is advised.
As you will be on the move most of the time, try to pack light. You might want one set of clean clothes per day, but you should do with less. (Having too much luggage is rather hard when traveling, and you will find that most people will wear jeans and sweaters several days, and might even wear T-shirts for more than one day if it is not hot.)
