Well, first and foremost, there is a significant part of this question that regards the definition of the "you" part.
What separates the you part from the mind part Is a really well debated question, however I assume that you distinguish here in the physical and the mental you.
It works both ways. Whereas the physical control over mindly matters is not as well documented, we all know how a mindset or attitude (still mind) can affect your physical appearance.
For instance in accidents the very perception of how bad the accident is can severely endanger the situation. Chock is, as to my recollection, a physical reaction to the minds own perception of the body being harmed. This leads to unconciousness, at a point where the body is not necessarily in a state that is life threatening. That is why you will often treat injuries with pain killers and relaxing medicine before attending the actual injury.
Also I would like to mention NLP where you control the brain by "faking" input to the linguistic center of the brain. For instance if you say out loud "I am in control of this situation", or "This doesnt really hurt" or the likes, you can thereby "physically" control or at least influence on your mind.
and of course as any well trained salesman, magician, thief etc knows ... you can by physically disturbing or manipulating your "victim"/client confuse his or her mind enough that strange decisions is made. Or, as used in mind control, apalement, paciveness is provoked.
So in short... you do not have full control of neither your physic nor your mind. Both can be trained, developed and shaped - but there are areas you can never (as of yet) get direct access to.

"Man and the monkey."
If the mind is left unattended, it resembles a monkey in the jungle, swinging from tree, to tree, to tree, to tree. A person must limit the amount of trees that it has access to, or it must be tied to a tree.
At times the monkey will become impatient because it feels as though it has been abandoned. In which case it must be reassured that it has not been forgotten. In time the monkey will learn patience and can then be placed on a leash.
When this is accomplished, the monkey is no longer able to run wild. The monkey will at this point be the owners pet.
If fed and tended to it will be mans best friend. If neglected it will break free and once again head for jungle and enjoy swinging from tree, to tree, to tree, to tree.
If this happens the monkey must be retrained.
Discipline is needed to keep the monkey subdued!

Most of the time it's the Mind which controls and regulates us through leaned behavior.We control the mind when we confront a new situation or desire a specific outcome from our actions.

Ahhhh ! Great question. Psychodynamic psychiatry and psychotherapy holds: "We are all unconsciously controlled and consciously confused".
But, the trickster has been very clever here. "it" has convinced the world that there is no unconscious !!
That leaves us with one thin slice of the pie, that is, what we perceive and sense; which is warped and distored and very inaccurate. It is inaccurate in large measure because, our perceptions get 'filtered' through our unconscious thoughts, beliefs and fantasy's - which we don't know we have. Great trick huh???!!!
And, no, it is not all or nothing....it is in varying degree's; which is also part of the trick.
As Jesus said, 'for it is out of the heart that lies, murders, envy's, etc come'.
