I have been buying a rotisseri chicken from my local supermarket, shredding it, toss it into a fry pan with some taco seasoning. Take my chips spread them on a pan cover with cheese and warmed chicked, put it in a 350 oven for 5-10 min top with salsa, sour cream, lettuce, jalapeno, tomato YUM!!!
Looking for new ideas, or topping sugestions, thanks!

My husband spent some time working a project in Mexico last year. We brought home this:
corn tortillas (must be corn)/ put on grill (must watch carefully cause can burn quickly)/ flip to grill other side then top with chicken as you do & cheese/ leave on grill to allow cheese to melt/ top with avacado, sour cream, homemade pico de gallo, a small squeeze of fresh lime juice, salt & pepper to taste & heaven! (especially since you feel like you are eating junk food but it is all good for you when using sour cream in moderation)

I will buy a chunk of beef roast, sear it on all sides, then put it in the crock pot with enchilada or taco seasonings and some water and cook till it falls apart, and the sauce is thickened. Then shred the meat, discarding any fat or gristle, and serve with homemade guacamole, shredded lettuce, cheese, tomatoes, green onions, and salsa. It's a hit with everyone, and really not that much work! Sometimes I will oil and grill an onion and green and red bell peppers, peel, chop, and serve as topping too. YUM!

If you like cheese you could take the seasoned meat you have been using or even if you like ground beef and mix that with cream cheese and salsa and green chili's then pour it over the chips like you have been add shredded cheese. Bake as usual. Then take black olives and what ever else you want lettuce, jalapenos tomatoes etc

OK, here's mine. Get 2 cans of spicy refried beans and spread them in a large greased deep dish pizza pan. Add a good amount of Taco Bell hot sauce. Dump the chips on it. For my husband's half I do taco meat, for my half I do black beans and rice. Then I top it with a lot of cheddar and manchego, then pickled jalapenos and black olives. Then I just bake it until the cheese is melted and the tips of the chips start browning. Then garnish with chopped green onions.
That's my nacho platter. It's pretty, and good, and always a hit.

I spread tortilla chips on a plate and top with seasoned ground beef, diced onions, diced tomatoes, black and green olives sliced, sliced jalapeno peppers, and top with shredded cheddar cheese. Bake in oven for about 1/2 hour at 350, then top with salsa and sour cream (guacamole if you like it) Yum, I think that is what we're having for dinner tonight.. thanks....

What you made sounds soooo tasty!
1. My mom usually fries up some beef, and makes chili with the sauce and kidney beans.
2.Then we put the nachos on a plate and spreads some nacho cheese dip on them.
3.She puts the chili on top of the the cheese dip. Then she chops up fresh tomatoes into little pieces and sprinkles them on over the chili.
4.Finally, my favorite part is when she puts a dollop of sour cream on top of everything.

I don't guess this is really what you were looking for, but it is a new idea. :o)
Chicken Dumplings
Pull chicken off of bone. Throw in pot with chicken broth. Bring to a boil. Pinch up canned bisquits or canned cresent rolls. (I like the cresent rolls.) Put the pinced dough in the pot and continue cooking until the dough cooks. You can also use tortillas. Cut up in dumpling size.
You can also roll out the bisquits or cresent rolls, let them set out and dry for a little bit. Then cut in more rectangle shape pieces.

i use ground beef, can of crushed tomato, onion, can of kidney beans, can of corn kernals , sliced or whole sun dried tomatos, sliced black olives, garlic, 1 small grated carrot , salt, teaspoon of sugar ,taco or burrito seasoning plus extra mexican chilli powder for the sauce, just cook the beef first in a saucepan then add the rest.
To me nachos without meat just aint nachos.

I microwave nachos with grated cheese on top, then add mild salsa (store bought) with some sour cream, chives, olives and cut-up pepperocinis. sometimes i add lettuce and bacon bits too it's sooo good!

Woah, that's a lot of work for nachos. I just slap a few on a plate, cover them with cheese, and nuke it until the cheese melts.
