There is a lot of interest in chicken breasts, but I find them dry, and they're more expensive than the thigh fillets. One fillet per person is just right, and you can fry them, bake them, crumbed or plain.
My favourite is a quick stir-fry.
Prepare all the ingredients by chopping into small pieces, depending on the cooking time for each.
For two people I use one large brown onion, cut in half and then sliced. Two medium cloves of garlic chopped is about right for this onion size
Carrots are roll-chopped into pieces as big as your little finger end.
Red capsicum I slice into one inch pieces.
Potatoes the same as carrots.
Add anything else you like.
Cut the chicken thigh fillets into small pieces, or slice then thinly. Fry quickly in a small amount of oil and a serious pinch of pimento (allspice). I use peanut for this dish. Remove from the pan or wok.
Next fry the onion, then put the meat back into the pan and add the other ingredients.
Add a couple of tablespoons of Mirin, rice wine, sherry, or just water, turn the heat down just below medium and cover for ten minutes, or less depending on the veges.
This is the time you can add some chopped Wong Bok (Chinese cabbage) on the top, and cook no more than a minute.
Dish out into bowls, and flavour with sweet chilli sauce.
They'll come back for more.
I like it because it's quick, and the flavour is better than the breast meat.

Then there's almond bread-crumbed fillets.
This is a bit more fiddly.
In three small plates or bowls put
1) SR flour
2) Lightly beaten egg
3) The breadcrumb mix
Dip the dry fillets into 1), make sure they're covered thinly with flour, then 2) to cover in egg, and then 3) to cover. Pat the crumbs onto the fillets so they stick.
Deep fry until browned lightly all over, or bake at 180° C (350°F) for about 20 minutes
Now - the breadcrumb mix
1/4 cup breadcrumbs
1/4 cup almond meal or very finely chopped almonds
1 teaspoon garam masala or Chinese five spice
1/8 cup grated parmesan cheese
Because of the almonds and cheese, don't cook at too high a temperature, or they'll burn.
Serve with whatever. I usually serve steamed potato with sweet potato or pumpkin and green beans or peas.
Goes will with a chilled Chardonnay.

Boil chicken. I use boneless skinless chicken, but any chicken will do. Pull it off the bone. Heat a little canola oil in a cast iron skillet. Put pulled off chicken in pan when oil starts getting hot. Heat the chicken until it browns a little. Add a little BBQ sauce. Mix with chicken.
Toast Hamburger buns. Add chicken and cole slaw. Serve with pork n beans or other BBQ sides or Picnic sides. Potatoes chips, potatoes salad.
Makes a great pork BBQ substitute.

This is my recipe. Take some boneless breasts and cut it into 1 inch cubes, place them in a ziploc bag and add some salt and pepper and some italian dressing zip it and shake. Let marinade in the refrigerator for 30 min or up to 2 hours and pour off any excess dressing then add flour to the bag enough to coat all the peices. zip and shake again. Fry in oil until golden brown. I make fries in the oven and a garden salad to go with this.

put chicken in crock pot with veggies
chicken stir fry with rice
try different parts of the chicken also, chicken wings, chicken legs, chicken thighs, chicken breast.....

I take boneless, skinless breast and coat them in parmesan cheese, gently brown them a bit in a skillet with small amount of oil. Then place in cassarole dish cover with spaghetti sauce, and bake, five minutes until done place a slice of provolone cheese over each piece of chicken. Bake until lightly browned.
Serve with salad, pasta or your fav. veggie.

I am a big fan of the following recipe - I have made it several times and I always get rave reviews. And I also find that you can use whatever pieces of chicken you like best (on the bone) with fine results.
