Make a nice fritta.
Here's my favorite.
Whats nice about it you bake it , can be done the nite before and it heats nicely in a microwave.

This one uses zuccihini but you can use any veggie or veggies of your choice or other fillings. Ex: brocolli, peppers, ricotta cheese, cheddar cheese or any type you like or a mixture of cheese, potatoes are especially good. Make it Mexican with chili and peppers to the mix.
If doing ahead just portion serving. They can be frozen for 2-3 months or refgerated for 7-8 days.
Experiment so you don't get tired of the same flavor.
Its is very easy.

BAKED ZUCCHINI FRITTATA

1 1/2 c. shredded zucchini
4 eggs, slightly beaten
3/4 c. fine bread crumbs

You can eat anything for breakfast-there's no law that it has to be "breakfast food" Have a peanutbutter sandwich or leftovers, eat a big salad or some soup. The sky is the limit.
I will be having beans and rice this morning, with a kiwi fruit.

Try muesli or rolled oats and add little cubes of fresh fruit and dry nuts. Also, yoghurt or buttermilk with some honey are pretty fine.
