cube and boil baby red potatoes. once they're done, just toss with PLAIN yogurt, a little salt, fresh pepper, lemon and lots of fresh dill.
soak bulgar wheat how it says on the package, then make a dressing, lemon juice, olive oil, salt pepper and fresh mint. then let the bulgar soak it up, put that on some flavourful greens (no iceburg, this kind of dressing lets the flavours of the lettuce come out, pick something you like)
um..couple suggestions, cos lamb is a heavier flavour...i thought somethings light, bright and fresh.
as for the lamb...garlic, oil, grill. keep it simple, get a good sear :)

If you have any mint jelly and redcurrant jelly (as in the UK accompaniment to meat and game), you can mix a tablespoon of each into a small pan. Heat up very gently, making sure it doesn't boil or burn. When it is a liquid, let it cool slightly, until it is like a syrup. Then brush it on to the lamb chops and grill the lamb each side, basting with more of the syrup, until cooked. With any of the syrup that is left, add it to a gravy and stir through.
Serve with seasonal veg (here in the UK, you might want to serve it with potatoes of some sort, and broad beans, peas, for example)

Simple sauce: chopped+fry onions+garlic, add chopped toms, red peppers, some tinned chick peas, dried apricots, seasoning and half some boiled new potatoes - put in a casserole dish and place the pan fried chops on top + put in a hot oven for 20mins. Its a simple Moroccon dish but tasty as hell+easy.

I like simple dishes, so grilled Lamb chops, with nice fresh new potatoes, maybe some thinly sliced runner beans, carrots, mint sauce of course, and a nice gravy
Edit
Hey D great minds think alike.

a potato salad would go well with them but not the normal one. my mum makes a good one that probably has a special name but i don't know it.
get some cocktail potatoes and boil them up
boil 3 eggs (hard)
OK get the cocktail potato's in the bowl and add some mayo like normal.
de shell the eggs and slice them so u get 5 or so slices to an egg
add them in to the bowl and mix them in gently
next u add soy bacon chips.
sounds yucky as it is soy
but they taste like the real deal, so add them in as well.
stir it all up and u r good to go.
i would add a gravy to the lamb chops as well.
it is simple to make and take very little time
hope your dinner is lovely :-)

Grill them and when they're almost cooked, spread them with English mustard, sprinkle with a little brown sugar on one side and return to the grill until the sugar has melted and is a nice golden brown, serve with chipped potatoes, and petit pois. Give it a go it won't be the last time you'll do it! ENJOY!

Boiled potatoes, roast potatoes, garden peas, carrots, and instead of boring old mint sauce, make a creamy onion sauce for a change! Mmmmm! lovely
