I know you wrap the salmon in foil but what do I put in with it and what temperture does it need and how long.

Hi there, can I recommend that instead of cooking in the oven (it can dry the salmon out) wrap salmon in secure foil parcels and place in saucepan, fill about halfway with water, bring to boil, and then simmer for around 10-15minutes depending how small , Hey presto... poached salmon, yummy.

Salmon Baked in Foil Recipe
4 (5 ounces each) salmon fillets
2 teaspoons olive oil plus 2 tablespoons
Salt and freshly ground black pepper
3 tomatoes, chopped, or 1 (14-ounce) can chopped tomatoes, drained
2 chopped shallots
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1 teaspoon dried thyme

Preheat the oven to 400 degrees F.
Sprinkle salmon with 2 teaspoons olive oil, salt, and pepper. Stir the tomatoes, shallots, 2 tablespoons of oil, lemon juice, oregano, thyme, salt and pepper in a medium bowl to blend.
Place a salmon fillet, oiled side down, atop a sheet of foil. Wrap the ends of the foil to form a spiral shape. Spoon the tomato mixture over the salmon. Fold the sides of the foil over the fish and tomato mixture, covering completely; seal the packets closed. Place the foil packet on a heavy large baking sheet. Repeat until all of the salmon have been individually wrapped in foil and placed on the baking sheet. Bake until the salmon is just cooked through, about 25 minutes. Using a large metal spatula, transfer the foil packets to plates and serve.

Here's two different recipes that I use to cook my salmon in foil in the oven.

Salmon fillets
mayonnaise
dill
onion powder

Cover a cake pan with foil. Place the salmon fillets in a single layer. Place a 1/8" thick layer of mayonnaise over the salmon fillets. Spinkle with the dill and onion powder. Bake in 400º oven for 20-30 minutes depending on the thickness of your salmon.

The second recipe I got from a restaurant in Juneau, Alaska who cooked the most wonderful salmon - they did theirs over a wood fire.

Salmon fillets
3 T brown sugar
2 T butter
1 T lemon juice

Cover a cake pan with foil. Place the salmon fillets in the pan. Heat the butter and mix in the brown sugar and lemon juice until the sugar is dissolved. Pour over the salmon fillets. Cover with foil and bake in a preheated 400º oven for 20 minutes and test for doneness depending on the thickness of the salmon. This recipe takes less time to cook that the one covered with the mayonnaise. You can also use a mayonnaise/sour cream mixture on the fish if you'd like.

Little oil, lemon juice or white wine and dill. Seal place in hot oven for maximum of 6 minutes. Note the cooking time 6 minutes any longer you will over cook the fish.

If that's what the directions say, then go for it:) I always cook my salmon on the BBQ (no fish smell in the house then), over mesquite chips. Lightly rub with olive oil and sprinkle with some salt and dried dillweed. About 5-8 min on each side.....

I add some lemon juice and black pepper to mine, wrap them in foil and put them in the oven around 190 degrees for about 20-30 mins

drunken salmon fold over tin foil fold sides and crimp tight put in salmon lemon ,orange and lime zest finley shredded and the segments pour in vodka or wot ever spirit rocks yer boat fold over top several times crimp tight bake in oven on a tray when the foil has expanded and puffed up put on a plate open at table and enjoy the experiance

Ginger Sesame Salmon

1 sheets (12x18”each) Heavy Duty Aluminum Foil
1 thin onion slices, separated in rings
1/2 medium carrots, cut in julienne strips or shredded
1 salmon fillets (4 to 6 oz. each), thawed
1/2 teaspoons grated fresh ginger
1 1/2 tsp seasoned rice vinegar
1/4 teaspoon sesame oil
Salt and pepper
Fresh spinach leaves

PREHEAT oven to 450 degrees F. Spray foil lightly with pam.

CENTER onion and carrots on sheet of Heavy Duty Aluminum
Foil. Top with salmon. Sprinkle with ginger; drizzle with vinegar and oil. Sprinkle with salt and pepper.

BRING up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.

BAKE 16 to 20 minutes on a cookie sheet in oven .

Serve salmon and vegetables on a bed of spinach. Sprinkle with additional seasoned rice vinegar, if desired.

Teriyaki Salmon

1/4 cup lite teriyaki sauce
1 tablespoon brown sugar
1 teaspoon toasted sesame oil
1 teaspoon minced fresh ginger *
1 teaspoon cornstarch
1 ½ cups snow pea pods (about 4 ounces), trimmed
1 large carrot, cut into 2-inch long very thin "matchstick" strips (about 1 cup)
Four 5-ounce salmon filets, skin removed
Salt and freshly ground pepper
1 tablespoon toasted sesame seeds, optional

Preheat oven to 400°F. Cut four 12 to 14-inch square pieces of aluminum foil. In a bowl, whisk together the teriyaki sauce, brown sugar, sesame oil, ginger, and cornstarch until well blended. Lay the snow peas and carrots in the center of each piece of foil. Lay the salmon on top of the vegetables and season with salt and pepper. Spoon the teriyaki mixture evenly over each piece of salmon. Seal each packet by bringing up the sides and folding the top edge over twice. Seal the edges in the same way. Place the packets on a baking sheet and bake until the fish is cooked through and the vegetables are tender, about 18 minutes. Open the packets (be careful of the steam!), place the salmon on individual plates, top with the vegetables and sauce, and serve. Top with toasted sesame seeds as desired.

Makes 4 Servings

* For convenience, use bottled minced ginger. Serve with rice and your favorite fruit on the side.
