modify the old one, to thank specific person you talked too and why you found the discussion interesting...
use the personal touch and use the thank letter to let them know how much you're interested...

Make a new one. As an employer, we usually gather all the thank you letters received from an applicant, and even if they're to different people, it makes a nice impression when each one is tailored to individual conversations rather than the same letter sent to each person.

Thank you's are always appreciated. It would be best to modify the original one because you don't really know who might see it. Add a few extra sentences, move the sentences around a little and always remind them how much you would love to be working with such an outstanding company, working along side such wonderful people. If it's going to the same person, I'd change it. Even if it's going to someone different, try to put in another sentence or two on why you feel that you are the best person for the job.
