There are two ways that I use to do this.

#1

Image >> Adjustments >> Desaturation

Then I use the History Brush Tool over the parts I want to return to their original color. You can activate the History Brush Tool by pressing "Y".

#2.

I duplicate a layer and desaturate the layer underneath using the method mentioned above. I then erase the parts of the top image that I don't want to keep in color. I prefer this method because you can easily undo mistakes and you aren't limited to just one color.

Desaturate the whole photo, using
Image > Adjustments > Desaturate.

Then, create a new layer. Be sure to select Color as the Mode in the options dialog.
Layer > New > Layer...

Choose the color you'd like to make your shirt in the pallette, and select the brush and start painting. You'll see that your shirt is now being additively colored.

A pretty simple way of doing so is by using the
sponge tool > desaturate
Use it on all places you want to suck the color from.

Copy the color picture and paste it to a new image.
Now you have 2.
Turn one to grayscale.
Turn it back to RGB color (it stays gray).
Copy the color shirt from the color picture.
Paste it in the gray image.
Align it carefully.
