i absolutely love baby carrots, but i've found that they sometimes have a tendency to get mushy if they've stayed in the bag too long. and by mushy i mean they have the consistency of firm, cooked carrots, and a really weird taste. is this the equivalent of spoiling, or have they just absorbed too much water, or what? i eat the crunchy carrots out of the same bag, and i want to make sure i'm not like poisoning myself or anything.

Check the date on the bags of baby carrots when you buy them. All bags of ready to eat baby carrots have an expiration date on them "some place" but many are hard to see. You probably have been eating out dated carrots.

Actually, when they absorb water they get firmer like lettuce, I believe. If you find that the only problem is that they're "wilted," just soak them in some water and they may firm up a bit.

Try leaving the bag open or even wrapping them in a dishtowel instead-root vegetables like air. They aren't harmful, they just taste bad.
