I personally like Glory Corn Bread Muffin Mix, but others work just as well.

Yeah I have done that with jiffy and a little extra flour
Have you tried to make muffins with chopped okra inside?
I add shoe peg corn,jalapeno, and onion too

The best okra we've ever made came from a recipe from the foodnetwork.com. It's by Paula Deen. You use a deep fryer, like a Fry Daddy. Absolutely delicious.

For savory muffins, diced jalapeno or a can of diced chilies, cream or whole kernel corn, shredded cheddar and sliced green onions (or chives). You can add sour cream to the batter, just look for a recipe in the search engine "corn muffins with sour cream" and that would score you a hit. You can also substitute buttermilk for the milk called for, it makes a richer tasting muffin.

I've tried Jiffy Mix. Although it fried up nicely, I didn't like the taste - too sweet for the okra.

I just use straight corn meal, but your methods sounds just as good.
