Cheesecake Cookies
*I WOULD JUST TOP OFF EACH COOKIE WITH EITHER FRESH BLUEBERRIES, BLUEBERRY PIE FILLING, OR BLUEBERRY JAM OR PRESERVES...ENJOY!!!
A cheesecake in a cookie. A buttery cookie with a soft cheese filled center and a graham cracker coating.

Ingredients:
1 c. butter
4 oz. cream cheese
1 c. sugar
1 egg
1 tsp. grated lemon rind
1 Tbsp. lemon juice
2 1/4 c. flour
1 tsp. baking powder
1/4 c. fine graham cracker crumbs
Cheese Filling:
Beat together until smooth 4 oz. cream cheese, 2 Tbsp. sugar, 1/2 tsp grated lemon rind, 1 egg yolk and 1 Tbsp. half and half milk or sour cream.
Directions
Cream butter, cream cheese and sugar until blended. Add egg, lemon rind and lemon juice. Mix well.
Combine flour and baking powder. Add to first mixture and blend well. Cover. Chill for at lest 1 hr.
Shape dough into 1-inch balls. Roll in graham cracker crumbs. Arrange on ungreased baking sheets.
With finger make an indentation in center of each cookie. Fill with 1/2 tsp of filling.
Bake at 350 degree for about 20 min. Remove to cool on wire racks. Store in airtight container.

Blueberry Pizza
Blueberry dessert pizza is made with cream cheese, sweetened condensed milk, lemon juice, sugar, and blueberries, along with other ingredients.
INGREDIENTS:
Crust:
1 cup all-purpose flour
1/4 cup confectioners' sugar
1/2 cup melted butter

Topping:
1 package (8 ounces) cream cheese
1 can (14 ounces) sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla extract
1/2 cup granulated sugar
2 tablespoons cornstarch
1/2 cup water
4 cups blueberries
whipped topping and fresh blueberries or sliced strawberries for garnish, optional
PREPARATION:
Combine flour and confectioners' sugar in mixing bowl. Add melted butter and mix to blend well. Pat dough out in a 14-inch pizza pan. Bake at 350° for 10 minutes, or until lightly browned.
In a medium bowl, beat cream cheese with sweetened condensed milk, lemon juice, and vanilla.
Spread over the cooled pizza crust.
In a large saucepan, combine sugar and cornstarch; stir in water. Cook, stirring constantly, over medium heat until thickened. Add blueberries and cool completely. Spread cooled blueberry mixture over cream cheese layer. Chill thoroughly. Cut in wedges to serve, with dollops of whipped topping and fresh blueberries or strawberry slices, if desired.

not a recipe but an idea.
I would bake some cookies and put some cheesecake filling with blueberries in the middle, like a sandwich. I don't know why it's so hard to find a recipe on line for them.

Hi! The only thing I can find is bars. I'm thinking it may be to difficult to make cookies like regular cookies. I can't find cookies, though. sorry :(
