terriyaki sauce seems to have much more flavor to me than soy sauce which basically tastes like salt water

Soy sauce for sure. Not keen on sherry and most terriyaki sauces I've come across have sherry in them.

I would rather use soy sauce and oyster sauce than teriyaki sauce because teriyaki sauce is loaded with sugar and soy sauce isn't.

I ALWAYS cook my stirfry's with kecap manis- a type of soy sauce, it is my favourite ingredient.
