Everything I think of is too strachy- like potatoes or corn. Don't like spinach so don't even suggest greens of any kind. Thanks!

Green beans, slaw and deviled eggs come to mind first. And I know it may be a little starchy but you can't forget the corn bread(to crumble up in the gravy). Also a dish of your favorite pickles on the table. Whether you like sweet, dill or something in between it's a great side and simple.

This is a REALLY OLD post but hopefully I will revive it. I am from NYC but lived in the south for 12 years and grew to love southern food. I have to say that NOTHING goes with chicken and dumplings except for a side salad. Chicken and dumplings is an amazing dish that should stand on its own. If you want to do a dinner around it try your favorite appetizer and dessert, Just serve the chicken and dumplings with a salad.

I suggest whatever you like. My mama fixed chicken and dumplings for a very large family and we had all sorts of sides. Never once did I hear a complaint, or see anyone walk away not stuffed. In the south you fix what you have on hand.

An old fashioned cucumber salad, thin sliced cucumbers in yummy sour cream sauce- my grandmother used to make both this and chicken and dumplings, sounds great together! (you could also just do thin sliced cukes in vinegar- still great, increas the sugar to make sweeter, add some crushed red pepper ( pizza peppers) and omit the sour cream)

Cucumbers with sour cream and dill.

2 to 3 cucumbers, thinly sliced
1/3 cup sour cream
1 tablespoon vinegar
pepper, sugar
1 1/2 tablespoons fresh chopped dill or 1 1/2 teaspoons dried dill

Arrange cucumber slices in a serving bowl, sprinkling layers with salt. Place a saucer or other weight on cucumbers to weigh down. Cover and let stand for several hours. Pour off cucumber juices. Combine sour cream, vinegar, pepper and sugar to taste, and chopped dill; add to cucumbers.

You want something with a different texture. The Chicken, and dumplings are soft, and limp. I would recommend something chunky like fried zucchini, or fried okra. Chicken, and dumplings are savory, so I would recommend the fried zucchini with Parmesan. Although the zucchini is also savory, the Parmesan gives it a little stronger bite.

fried okra.
Slice okra into coin shapes. Dredge in flour. Dip in beaten egg, then in dry bread crumbs. Fry in a skillet in about a 1/4 inch of cooking oil (such as canola) over medium high heat. Fry on each side till golden brown.
